Mashed potatoes this is a great meal for using up leftover mashed potatoes but i usually make them fresh.
In a large dinner bowl or soup bowl add your mashed potatoes to the center. Add margarine and milk to potatoes and using a hand held mixer or your kitchen aide blend until fluffy and smooth. You may need a little more milk depending on how thick you want them. Turn heat to low and then check and drain your potatoes.
Decrease the heat cover and simmer 18 to 20 minutes until the chicken is tender and no longer pink. Mash the potatoes with 1 3 cup milk or half and half and 1 4 cup of butter. Once it s thickened the chicken should shred some as you stir. Remove the chicken from the pot to cool reserving the broth in the pan.
Place chicken onion and salt in a 4 5 quart dutch oven and cover with water about 8 cups. Take pot off stove. Serve the chicken and noodles right over the top of the potatoes. Put the chicken and broth in a large saucepan.
